The Bruttiboni, also known under the name Mandorlati di San Clemente, are the sweets of Prato. The recipe is very simple, plan to mix sweet almond, some bitter almonds, egg whites and mounted snow and a bit 'of lemon peel, with the dough balls are formed of irregular (which looks "ugly" ) that you bake in the oven on a thin wafer. Some recipes are dusted with powdered sugar. In Prato they are often sold with the biscuits of Prato.
